I have just started using Office 2008 (full version with Exchange support).

When I receive a meeting invitation from an Outlook client that contains an attachment, the meeting appears in the Entourage calendar, but the attachment is missing.

The attachment is perfectly fine inside Entourage email and can be opened properly, however in Calendar it disappears completely.

Can someone explain what I am doing wrong?

You're not doing anything wrong - Calendar entries in Entourage don't support
attachments, only links. You have to fish them out of the invite.

If this is a feature that you want, suggest it to Microsoft via the Help
menu.

Thanks for the clarification.

Alternatively, is it possible to automatically establish a link between the original mail message and the new calendar entry?

Select entry. Under Tools in the Menu bar select link to...

In Entourage 2008, you can customize the tool bar to add the Link icon.

Ugh. Big problem with this is that it's a manual process and it
doesn't even change the state of the item - no link icon appears on
the meeting message, for example, to alert the user that there's a
linked doc or message. I don't understand how they can miss something
this critical after so many years of work on this product.
