hi,

I want to create plug-ins for entourage. can anybody tell me, how to
create plugins and which is best language/script language for it.

More information is required. What is it you want these "plugins" to do
exactly?

1. A very simple plug-in => add a menu in entourgae, and open a
dashboard from it.

could i be able to provide functionality like editing events or adding
some properties to event or contact.

You can't ad menus to Entourage. You can add items to the Mac OS X
AppleScript menu though.

Please define "a dashboard"? Do you mean you want to invoke Mac OS X
Dashboard to display a widget?

You can manipulate events not by adding windows, menus, and other GUI
elements, but by working with the events behind the scenes using
AppleScript.
