[1] Launch iTunes;
[2] Create a playlist and add the audio files you want to convert;
[3] Open menu iTunes > Preferences > Importing and set the encoding
parameters you want (either choose from the presets in the menu's or
fine tune the settings using the "Setting > Custom..." menu item);
[4] Close the preferences ("OK");
[5] Select every track you wish to convert (if you created a playlist in
step 2, choose menu "Edit > Select All");
[6] Choose menu "Advanced > Convert selection to MP3" ('MP3' will be
substituted with the encoding you chose in step 3 if applicable);
[7] Wait for iTunes to finish encoding;
[8] Switch to your main iTunes Library and click the heading of the
column "Date Added" to sort in descending order (if you don't see it,
scroll right or failing that, use menu "Edit > View Options" to turn it
on). If it sorts ascending first, click once more... ;
[9] Your newly created files will now be at the top of the list. Select
them and drag them out of the iTunes window to your desktop or a Finder
folder of choice. A copy of each dragged file will be created there;
[10] If you want to remove the newly encoded files from your iTunes
music folder, delete them from the Library window and answer the dialog
with "Yes". They will be moved to the trash.
If desired: Remove your original files in the playlist from the Library
option-deleting the playlist.
That completes the batch conversion.
