Howard,

It looks like if you use Command (the apple key) + 2, it will switch
you between full screen and windowed mode (at least in Beta 2).

Also, if you open preferences under the RDC menu and go to the
"Display" tab you can also modify the size of the screen size via the
drop down list, as well as set a number of other settings such as the
color depth, to show desktop wallpaper etc....

Look into X11 rdesktop. Fully customizable screen size.
