I want to add a single 1Gb memory module to an eMac 1.25Ghz if I can still use
the 256Mb memory module that comes with it. Apple only supports a
total of 1Gb in the eMac.

Has anyone had any experience with exceeding 1Gb in a new eMac?

I can't find any indication at vendor sites that this eMac can use more
than 512MB per slot.
