I've done it and it's worked for me. Your G5 will need to have an
S-Video (or TV output) connection and your DV camcorder will need an
S-Video input (or composite in with S-Video adapter)*
Then just use the "Detect Displays" feature from the Displays System
Preferences. Your DV camcorder should look like an external TV. Then
just record with the camcorder as per its recording instructions.
Then you'll need to capture the DV off the camcorder with iMovie.
*I have an ATI Radeon 9800 and it has an S-Video out. I don't know what
G5 or video card you have so you may or may not have an S-Video out on
the card. The OEM video cards aren't the same as the retail, Apple has
different specs. Apple does make a DVI to Video adapter that should work
for you if you don't use your DVI for your main display.<!-- ~MESSAGE_AFTER~ -->
