You may to need to be more specific about what you're looking for. The
QuickTime API is extensively documented, although there's always room
for improvement. The QuickTime libraries are present on any Mac built in
the last 17 years and most in the last 20, as well as any Windows
machine that has QuickTime installed. Headers are available as part of
most (maybe all) Mac development systems and from the QuickTime for
Windows SDK here: <http://developer.apple.com/sdk/>

Free as in beer, or free as in speech ?

It's free as in beer: no charges to use it, or to learn how to use it.
It's not open source since it contains some element which concern DRM.
However, you can obtain the source code for a great deal of the elements
that make up QuickTime though the documentation is generally so good
you're unlikely to need it.

Apple's developer tools come free with every Macintosh and with every copy
of the operating system. Look for something called 'Xcode tools
installer' or 'Developer tools installer' on the installation DVDs. The
tools include full header files and documentation.

You can download the same information from the web. The documentation is
in several places including here

and you can download the header files and various useful preparation and
analysis tools by signing up to Apple's Developer Connection. This
include the 'Apple Online Membership' product which is entirely free:
